CUCUMBER KIMCHI
After everyone tries this simple dish they all want the recipe. We use CUCUMBER KIMCHI on our eggs every morning unless we are using our famous Sauerkraut. Love this recipe from Chuni, our Korean friend in Basin.
4-5 cucumbers 2 bunches of green onions
Cover with a tablespoon of salt. Let soak 10 – 20 min
Toast 2 tablespoons of sesame seeds
Add 1-2 teaspoons crushed red pepper

I just ground up a bunch of the meat from the cider in my Vitamix and now have the most amazing mustard type sauce – citrusy and spicy. I call it Fire Sauce.
But wait there’s more!!! One teaspoon of this sauce in a cup of warm water makes an amazing tea, thanks to one of my yoga students for figuring it out!! Great for when you have a cold or replace your lemon water in the morning and start you metabolism up and build that Agni up in the belly. I love it!!
Also I dried a batch in the oven and ground it up into some powerful seasonings. This will clear your sinuses. I call it Fire Powder.
I have a label on top that says, don’t inhale but what do we do?? Gotta smell it! I’m sure this could be made into a tea as well.
Hay Maker Punch
This is a great refresher and substitute for Gatorade.
Any Apple Cider Vinegar with the mother will do, and probably kombucha would work too. I’ve not tried it.
