CUCUMBER KIMCHI

After everyone tries this simple dish they all want the recipe.  We use CUCUMBER KIMCHI on our eggs every morning unless we are using our famous Sauerkraut.  Love this recipe from Chuni, our Korean friend in Basin.

4-5 cucumbers 2 bunches of green onions

Cover with a tablespoon of salt. Let soak 10 – 20 min

Toast 2 tablespoons of sesame seeds

Add 1-2 teaspoons crushed red pepper

1 – 2 teaspoons cayenne
1 tablespoon minced garlic
Add green onions with tops
Refrigerate and eat within a couple weeks.

To turn it into kimchi I just added to the batch;
2 tablespoons toasted sesame seeds
1 heaping teaspoon of crushed red pepper
1 teaspoon of cayenne

FIRE CIDER
Make your own.  But if you have a cold go get some at the health food store and get the toxins to start your batch.
This tonic aides digestion, combats colds, and cures hangovers.   It makes you cry slicing the horseradish!!

I have saved the fruits and veggies and used them over twice and can tell no difference in taste. I add more spices and fresh Apple CiderVinegar and Honey.
Looks gorgeous fermenting.  Takes 6 Weeks. Give it a shake every couple of days.  Shake the bottle before you pour. Enjoy!

Hold the phone!!!

 

I just ground up a bunch of the meat from the cider in my Vitamix and now have the most amazing mustard type sauce – citrusy and spicy. I call it Fire Sauce.

 

 

 

But wait there’s more!!! One teaspoon of this sauce in a cup of warm water makes an amazing tea, thanks to one of my yoga students for figuring it out!! Great for when you have a cold or replace your lemon water in the morning and start you metabolism up and build that Agni up in the belly. I love it!!

 

 

Also I dried a batch in the oven and ground it up into some powerful seasonings. This will clear your sinuses. I call it Fire Powder.

 

 

I have a label on top that says, don’t inhale but what do we do?? Gotta smell it! I’m sure this could be made into a tea as well.
